Jalapeño beer bread

Ingredients

  • 3 cups flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 thinly diced jalapeño
  • 1/4 cup sugar
  • 12-ounce can of cheap light beer
  • 1⁄1/3 cup melted butter

Instructions

Preheat oven to 375 degrees. Mix together dry ingredients and jalapeño, leaving a well in the middle of the bowl. Pour in the beer and mix well.

Grease a loaf pan with coconut oil and pour in the wet dough. Pour melted butter over the dough.

Bake for 1 hour. Drop the loaf onto a wire rack and let cool for at least 15 minutes before slicing.
