Korean ground beef rice bowl

  • 1 pound ground beef
  • 3 garlic cloves, minced
  • 1/4 cup packed brown sugar
  • 1/4 cup soy sauce
  • 2 teaspoons sesame oil
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon pepper
  • 2 cups cooked brown rice
  • 1-1/2 cups diced onions and bell peppers
  • 1 jalapeño, sliced (optional)
  • Kimchi and sesame seeds for garnish (optional)

Instructions

Cook the rice.

While the rice is cooking, take a large wok or skillet and fry the onions and bell peppers over high heat in some kind of cooking oil (or butter) until they look ready to eat. (I like to char them crunchy in peanut oil, but do whatever moves you.)

Next, remove the onions and peppers to a separate bowl and brown the hamburger.

While the hamburger is browning, take a small bowl and whisk together the brown sugar, garlic, soy sauce, sesame oil, ginger, red pepper flakes and pepper.

When the meat is done, drain off the fat and reduce the heat. Add the bowl of onions and peppers and stir in the sauce mixture. Simmer on low for 15 minutes or so, stirring occasionally.

Serve over hot rice and garnish with green onions, kimchi and sesame seeds.
