Ingredients
- 2-1/4 cups all-purpose flour
- 1-1/2 teaspoons baking powder
- 1-1/2 teaspoons baking soda
- 1 teaspoon salt
- Dash of cinnamon
- 2 eggs
- 2-1/2 scant cups milk
- 2 Tablespoons lemon juice
- 2-1/2 Tablespoons sugar
- 3 Tablespoons melted butter
Instructions
Stir the lemon juice into the milk and let stand at least five minutes. Meanwhile, combine the dry ingredients in a large mixing bowl and make a well in the center.
Beat the eggs into the milk mixture, then stir into the bowl of dry ingredients along with the melted butter. Whisk to combine. Add a little flour if the consistency is wrong. Heat a griddle and melt some butter or coconut oil on it. Drop 1/3-cup sized dollops of batter onto the griddle and cook until each side is finished (flip when you see bubbles).
