Pork chops like a boss

Start to finish: 45 minutes

Ingredients

  • 4 or 5 thicc pork chops
  • 1 egg, beaten
  • 1/2 cup panko bread crumbs
  • Bacon fat or olive oil
  • 1/2 sweet yellow onion, cut into thin strips
  • Garlic salt and pepper to taste

Instructions

Preheat the oven to 425°. Thaw the chops if needed. Beat the egg in a small bowl, adding a splash of milk and garlic salt and pepper to taste.

In a medium cast-iron skillet, heat the bacon fat over medium-high heat. Once the fat is smoking, dip the chops in the egg mixture, coat in bread crumbs and add to skillet. Add the onions. Sear the chops until just charred on each side.

If your skillet isn't oven-proof, transfer the skillet contents to an oven-safe dish. Bake for 10 minutes, then flip. Bake for 10-15 minutes more, or until an internal thermometer registers 160°.
