Ingredients
- 3-1/2 cups potatoes, peeled and diced
- 1/2 cup chopped onion
- 1/3 cup chopped bell pepper
- 1 jalapeño, diced (optional)
- 1 cup cooked ham
- 3-1/4 cups chicken broth
- 1/2 teaspoon salt
- 1 teaspoon pepper
- 5 Tablespoons butter
- 5 Tablespoons all-purpose flour
- 2 cups milk
Instructions
In a small skillet, sauté onions and peppers in bacon fat until the onions are transparent.
Stir everything into the crockpot except the milk, flour and butter. Cook on low for 6-8 hours.
About 20 minutes before serving, melt butter in a saucepan over medium heat. Gradually add flour and milk, stirring constantly. Stir into crockpot and cook for an additional 20 minutes before serving.
