Slow cooker spicy mongolian beef

Ingredients

  • 1-1/2 pounds sirloin steak
  • 1/4 cups cornstarch
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 3/4 cup soy sauce
  • 3/4 cup water
  • 3/4 cup brown sugar
  • 1/2 cup carrots, sliced
  • 1/2 teaspoon ginger
  • 1 jalapeño, diced
  • 1/2 sweet yellow onion, diced
  • 1 cup white rice
  • Fistful of green onions or scallions for garnish
  • Sesame seeds for garnish

Instructions

Thaw steak and cut into thin strips. Coat steak pieces with cornstarch. In a medium skillet, heat olive oil over medium high heat and sear garlic, yellow onion, jalapeño and steak.

Pour this mixture into a slow cooker. Stir in soy sauce, water, brown sugar and carrots. Cook on low heat for 5-6 hours until tender.

About half an hour before it's done, cook the rice. Serve beef mixture over rice, optionally garnishing with green onions and sesame seeds.
