Slow cooker white chicken chili

Start to finish: 8 hours, 30 minutes

Ingredients

  • 1-1/2 pounds boneless, skinless chicken breasts
  • 1 large sweet yellow onion, diced
  • 4 cloves garlic, minced
  • 32 oz. low-sodium chicken broth
  • 2 cans diced green chiles
  • 1 jalapeño, diced
  • 1 can whole-kernel sweet corn, drained
  • 2 teaspoons cumin
  • 2 teaspoons oregano
  • 1 teaspoon chili powder
  • 1 Tablespoon lime juice
  • 1 packet dry ranch dressing mix
  • 1/2 teaspoon cayenne pepper
  • Fistful of fresh cilantro, chopped
  • 6 oz. cream cheese, softened

Instructions

Thaw the chicken, if needed, and trim the fat. Add all ingredients except the cream cheese to your slow cooker and stir. Cook on low for eight hours, stirring occasionally.

Shred the chicken and add the cream cheese. Turn up the heat to high and cook for another 15-20 minutes. Serve with your favorite toppings.
