Sourdough starter

Ingredients

  • 1 package active dry yeast
  • 2-1/2 cups warm water
  • 2 cups all-purpose flour
  • 1 Tablespoon sugar

Instructions

Dissolve yeast in 1/2 cup of the water, then stir in the rest of the water and the flour and sugar. Using a wooden spoon, beat until smooth. Cover with 100% cheesecloth and let stand at room temperature, stirring the mixture a few times a day, for five to 10 days. You're looking for a smell of fermentation and no more bubbles. Transfer the mixture to a 1-quart container, cover and refrigerate.

Add one teaspoon of sugar every 10 days if you don't use the starter.

To use: Measure out the amount of mixture you need for the recipe and let stand 30 minutes at room temperature. Meanwhile, replenish your starter.

To replenish your starter: For every cup of starter removed, stir in 3/4 cup all-purpose flour, 3/4 cup water and 1 teaspoon sugar. Cover with cheesecloth and let stand one day or until you see bubbles. Cover and refrigerate.
