Sweet & sour meatballs

Start to finish: 1 hour

Ingredients

  • 2 pounds hamburger
  • 1 cup thinly diced onions
  • 1 egg
  • 1/2 cup bread crumbs (1 piece of bread)
  • 1 teaspoon chili pepper
  • Dollop of barbecue sauce
  • Salt and pepper to taste
  • 2 cups rice (white or long grain)
  • 3-1/2 cups water
  • 1 teaspoon salt
  • 8 ounces of chili sauce
  • 8 ounces of grape jelly
  • 1 cup white rice

Instructions

Preheat the oven to 425°.

Thaw the hamburger, if needed. In a mixing bowl, combine hamburger, egg, onions, bread crumbs, barbecue sauce, chili powder, salt and pepper. Roll the meat mixture into golf-ball-sized balls and place on a baking sheet. Bake for 15-20 minutes until browned.

While the meatballs are baking, make the sauce. In a large saucepan, heat the jelly and chili sauce over low heat until the jelly dissolves. When the meatballs have finished baking, simmer them in the sauce mixture for 20 minutes, stirring occasionally.

While the meatballs are simmering, make the rice.

Serve the meatballs over rice.
